Pork Belly Banh Mi [step by step photo tutorial]

Step by step on how to make a Pork Belly Banh Mi:

Let's begin.

Start with 4lbs of pork belly (~$10/lb).
Slice into thick slabs.

Marinade for about 30mins.
Put on grill to add some charred edges.
Then finish cooking off in oven for additional 10mins.
Slice them.
Nomnomnom, look at that fat to meat ratio.
Get some fresh baguettes from Lee's and give them a light toast.
Cut in half and put mayo spread on both sides.
Assemble.
Spread. Cucumber. Pork belly. Pickled Vegetables. Cilantro.
Cut and serve.
Mmm, my first of three sandwiches that I devoured.

Pickling juice for vegetables (cabbage, carrots, jalapeno):
rice vinegar
sugar

Marinade for pork belly:
soy sauce
brown sugar
ginger
garlic
black pepper

Mayo spread:
mayo
soy sauce
black pepper
