Strawberry Mascarpone Tart


A gorgeous dessert that will impress any Mom on Mother's Day! (or anyone on any day!)

This tart is ..


  • Aesthetically pleasing. Hello? Strawberry roses! 
  • One of a kind. Each and everyone of these strawberry roses was carved with love.
  • Refined sugar free/ healthy-ish. Other than sugar inherent in the crackers, only honey was used to sweeten the filling.
  • Delicious. YES!


This tart was really simple and fun to make. I love that I got to be creative with the toppings, and I think it turned out quite appealing. It's strawberry season, and the strawberries at the market were ginormous this time around. The bigger sizes made it easier for this first time strawberry rose carver. 

I made six roses of varying sizes and filled the space with sliced strawberries, blackberries, and pistachios. The red roses, light pink center of the sliced strawberries, and dark blackberries made for a beautiful color contrast.


Strawberry Mascarpone Tart
Inspired by How Sweet Eats
makes one 14 x 4 inch or one 8 inch round tart pan
1 1/2 cups cookie crumbs (such as graham crackers, biscoff cookies, oreo cookies)*
5 Tbsp unsalted butter, melted
8 oz mascarpone cheese, at room temperature
2 Tbsp milk**
2 Tbsp honey, or enough to taste
1/4 tsp vanilla extract
1/2 tsp lemon juice
2 pints of strawberries
Extra garnishes:
more berries!
lemon zest
pistachios
honey, to drizzle or to brush on berries
*I used McVitie's Digestives
**I used unsweetened almond milk

Crust: Stir together cookie crumbs and melted butter until combined and all the crumbs are moistened. Press into tart pan, pressing it up along the sides until packed. Optional: bake at 350F for 10 mins or until golden brown. Cool before spreading mascarpone on.

Filling: Stir together mascarpone, milk, honey, vanilla extract, and lemon juice until creamy and combined. Spread mascarpone on crust evenly. Refrigerate for at least 1 hour.

Finishing Touches: Place strawberries and any topping on the mascarpone tart. For some shine, brush berries with melted honey. Serve immediately, or keep in the fridge until ready to serve.
